This post is for our little friend Asha. After a full week of school and activities she loves nothing more than a fancy breakfast on a weekend. Granola wasn't quite her thing so here is something slightly sweeter and totally satisfying for her lovely mum Anne to cook up!
I haven't done a lot of French toast in my time, I have never been a big fan but I think I was trying to keep it simple and healthy. Stuff that, it's the weekend... lets make it taste good right?!
Serves 1-2
Ingredients:
2 slices of bread, a little on the stale side is good
2 eggs, lightly beaten
1/3 tsp sugar
a couple of shakes of cinnamon
butter
1/4 cup blueberries (or raspberries or strawberries)
icing sugar to serve
maple syrup (optional)
Method:
- Beat your eggs in a dish wide enough to accommodate the bread
- Add the sugar and cinnamon and stir
- Soak you bread until saturated
- Heat your pan and add a little butter to help toast the bread
- Cook your soaked bread until golden brown on each side
- Serve with bluerries and sprinkle with a little icing sugar
- Enjoy with maple syrup
